FISH FOR FRIENDS

I love a traditional roast, but since my local farmers’ market has started up again, the freshest fish I can get is on a Sunday. Given the size of the queues, I’m not alone in wanting to take advantage of the just-landed catch. It adds a bit of variety to the week’s big family meal, and this is by far the fish dish that’s most requested in my house. My fish-and-two-veg is a play on classic fish and chips, brought together with a garlic butter that my kids absolutely love.
