MIX IT UP WITH MUSHROOMS
BUTTON MUSHROOM STROGANOFF
Whether whole, chopped or sliced, button mushrooms are versatile. We use them in a creamy stroganoff seasoned with mustard, white pepper and paprika.

• 250g button mushrooms
• 300-350g beef or ostrich fillet, sliced into strips
• salt and freshly ground pepper
• 30ml (2T) olive oil
• 15ml (1T) butter
• 2 onions, cut into quarters and the layers separated
• 60ml (¼c) white wine (optional) 15ml (1T) flour 250ml (1c) cream or sour cream
• 15ml (1T) Dijon mustard
• 2,5ml (½t) each white pepper and paprika
• 1 green pepper, cut into chunks
TO SERVE
• pasta of your choice, cooked al dente
• fresh parsley
