I love arancini, the crunch of the breadcrumb coating against the rich, soft risotto inside and, if you’re lucky, a gooey pull of mozzarella in the middle. But, there’s no way around it – they are a weekend affair with three trays needed for the breadcrumbing, and then there’s the deep-frying. So here I’ve delivered all those elements in an easy risotto that also turns out like a rice version of mac & cheese.
