Celebrate chicken
ROOIBOS-SMOKED HONEY-BASTED CHICKEN
Rooibos tea is as South African as it gets. We marinated a whole chicken in cold rooibos tea and used dried tea to lightly smoke it.
SERVES 4-6 PREPARATION: 10 MIN MARINATING: 2 HOURS COOKING: 2 HOURS
1 large whole chicken
1 orange, halved
30ml (2T) rooibos tea leaves
MARINADE
500ml (2c) strongly brewed rooibos tea, cold
60ml (¼c) each soy sauce and brown sugar
4 garlic cloves, bruised
1 onion, sliced into quarters
BASTING SAUCE
60ml (¼c) honey
15ml (1T) soy sauce
5cm fresh ginger, grated
Heat a kettle braai, put a braai grid in the middle and keep some tin foil handy.
1 Put the chicken in a deep marinating dish.
