SPICED APRICOT CHICKEN

SERVES 4-6 PREP 20 MINS COOK 1 HOUR 15 MINS

¼ cup olive oil
1.5kg chicken drumsticks
1 onion, thinly sliced
5cm piece ginger, peeled, grated
4 garlic cloves, crushed
2 long green chillies, split
2 tsp each ground cumin, coriander seeds
1 tsp each black pepper, turmeric, chilli flakes, cinnamon
400ml can tomato puree
1 cup chicken stock
400g can apricot halves in natural juice, juice reserved
2 small eggplants, cut into 8 slices lengthways
2 tomatoes, chopped
2 tbsp lemon juice
wholemeal couscous, mint, natural yoghurt, lemon wedges, to serve

1 In a heavy-based saucepan, heat oil on high. Brown chicken in two batches, 3-4 mins each. Remove from pan.
