SPICED APRICOT CHICKEN
SERVES 4-6 PREP 20 MINS COOK 1 HOUR 15 MINS
• ¼ cup olive oil
• 1.5kg chicken drumsticks
• 1 onion, thinly sliced
• 5cm piece ginger, peeled, grated
• 4 garlic cloves, crushed
• 2 long green chillies, split
• 2 tsp each ground cumin, coriander seeds
• 1 tsp each black pepper, turmeric, chilli flakes, cinnamon
• 400ml can tomato puree
• 1 cup chicken stock
• 400g can apricot halves in natural juice, juice reserved
• 2 small eggplants, cut into 8 slices lengthways
• 2 tomatoes, chopped
• 2 tbsp lemon juice
• wholemeal couscous, mint, natural yoghurt, lemon wedges, to serve
1 In a heavy-based saucepan, heat oil on high. Brown chicken in two batches, 3-4 mins each. Remove from pan.
