Gem lettuce cups with lemongrass and chilli crab
SERVES 4
• 1 long stick of lemongrass or 1 small pot of lemongrass paste
• Juice and zest of one lime
• 400g cooked white crab
• 2 red chillies, medium heat
• 12 little gem lettuce leaves
• 1 tsp extra virgin olive oil
• Fresh coriander leaves
• Lime wedges to serve
