THE Double Deuce Lounge in Sydney’s CBD is named after the roadside bar in the 1989 Patrick Swayze movie, Road House. Describing itself as a cocktail bar inspired by 70s porn chic, the drinks list is full of natty twists on old classics like the Cosmopolitan. I ordered the BabyCham. Not the famous “champagne perry” that was the first alcoholic drink ordered by generations of young women in the UK from the 1950s through its peak in 1970s and revivals in the 1990s and 2010s. But a sophisticated modern take containing calvados, clarified corella pear, manzanilla sherry, cold brew sencha, leatherwood honey syrup and more, batched and force carbonated and served in a champagne flute.
