Mixing melted chocolate with anything is always a bit of a gamble – sometimes you follow the instructions to a T and the end result is still a little grainy. If that happens, don’t worry – it’ll still taste awesome.

You can add some fresh berries on top for a burst of flavour and colour.

Chocolate mousse

Prep: 20 minutes (plus 4 hours to set).

Serves 4. Gluten-free.

200g good-quality, dairy-free eating chocolate (50% cocoa solids or higher is often dairy-free)
1 tablespoon just-boiled water
1 cup canned chickpea liquid (aquafaba)
1 teaspoon lemon juice
