Cauliflower Soup with Cumin Toasted Cauliflower & Crispy Chickpeas

Serves 4

Bursting with rich flavours, this hearty soup is a feast for the eyes as well as the palate. The sustaining plant protein from the chickpeas and the complex high-fibre cauliflower carbs blend beautifully with the good fats and oils.

• 2 whole , outer leaves trimmed• 30g (1 oz) • 250g (8.8 oz) (suitable for mashing), peeled• 1.2L (2.1 pints) • 100ml (3.3 fl oz) • Juice of 1 • 1 large , crushed•
