This healthy and tasty lunch is also happily gluten-free! The cauliflower rice is a fab low-carb alternative to normal white rice, making it a much lighter meal.
For the cauliflower ‘rice’:
• 1 tbsp rapeseed oil• 1 large clove , crushed• 2 tsp • ¼ tsp • ½ head of , grated to a fine ‘rice’ like texture• ½ tsp • ¼ tsp
