Leek Wantons with Cauliflower Rice

Makes 5 wantons (serves 1)

This healthy and tasty lunch is also happily gluten-free! The cauliflower rice is a fab low-carb alternative to normal white rice, making it a much lighter meal.

For the cauliflower ‘rice’:
