The stylish hotel restaurant continues to draw gourmands from all over Singapore, thanks to its appetising European offerings from its three culinary theatres: charcuterie and cheese room, an open charcoal-grill kitchen, and a wood-fired oven. The standouts in the menu are still the grilled meats, the likes of Australian Angus triple Tomahawk and Batalle-Spanish Duroc white pork rack, cooked using specially-imported jarrah hardwood from Western Australia. This way of cooking renders a smoky and extremely flavourful meat.

Set in the colonial cluster of Dempsey Hill, the idyllic location of The Dempsey Cookhouse & Bar, along with its gorgeous monochromatic interiors, makes it a perfect spot for romantic dates. The Singapore flagship of world-renowned chef Jean-Georges Vongerichten, the restaurant serves a contemporary menu of Asian-inspired European fare. Not to be missed is the egg caviar, featuring buttery brioche sandwiching creamy sous-vide egg yolks crowned with a dollop of caviar; and the thin-crust black truffle and fontina pizza that is savoury and fragrant. For dessert, we recommend the classic warm chocolate cake, topped with a quenelle of vanilla ice cream.
