Pea & crispy pancetta zuppa

This simple pea soup is anything but boring

SERVES 4 Preheat oven to 200°C. Line a baking tray with baking paper. Heat 2 tbsp olive oil in a large saucepan over medium heat, then add 2 roughly chopped small onions, 2 crushed garlic cloves, ½ a roughly chopped celery stalk and 2 peeled and roughly chopped potatoes, along with a few sprigs of thyme.
