Beetroot and Nectarine Salad with Herbed Dijon Dressing

Serves 4, Prep and Cook: 20 mins

¹/ ³ cup walnuts
120g pkt mixed salad leaves
250g punnet whole fresh beetroot, cut into wedges
2 nectarines, cut into wedges
½ x 250g tub marinated feta, drained

DRESSING

2 tblsps extra-virgin olive oil2 tblsps Dijon mustard1 tblsp white3 tsps honey1 small clove garlic, crushed2 tblsps finely chopped fresh coriander leaves
