White chocolate & passionfruit eclairs

80g butter
1/3 cup (160ml) water
1 cup gluten-free plain flour
1 tsp cream of tartar
4 eggs, lightly beaten
200g white chocolate, coarsely chopped

200g white chocolate, coarsely chopped
¾ cup (180ml) pouring cream
1 tbsp passionfruit pulp
1 Preheat oven to 200°C. Grease and line two oven trays.
2 Stir butter and water in a medium saucepan over low heat until butter is melted. Bring to the boil. Add sifted flour and cream of tartar; cook, stirring, for 2 minutes or until mixture thickens and forms a ball. Remove from heat.
3 Transfer mixture to a medium bowl of an electric mixer. Beat in eggs, one at a time, beating until well combined between additions.
