MUSHROOM BURGER
SERVES 6 COOLING: 30 MIN COOKING: 25-30 MIN
MUSHROOM PATTIES
15ml (1T) olive oil \ 350g mixed mushrooms, chopped
1 red onion, chopped
2 slices bread, soaked in milk
2 eggs
30ml (2T) coconut flour
125ml (½c) sunflower seeds, toasted
5ml (1t) salt
a handful coriander, chopped
1 garlic clove, finely chopped
zest of 1 lemon, finely grated
250ml (1c) mozzarella cheese, grated
BURGER SAUCE
60ml (¼c) mayonnaise
60ml (¼c) plain yoghurt
15ml (1T) tomato sauce
1 small onion, finely chopped
BURGERS
a few spinach leaves \ 6 bread rolls, sliced open
1 red onion, sliced into separated rings
2 tomatoes, sliced
30ml (2T) braai sauce
Preheat the oven to 200°C. Line a baking sheet with baking paper and grease with non-stick spray.
