Watermelon, Feta And Mint Salad

3 cups of cubed watermelon
2 tbs olive oil
juice of a lime
½ tsp salt
½ tsp black pepper
½ cup chopped mint
1 cup crumbled feta cheese

Note: The salad must be made just before serving. Cut the rind from the watermelon, then chop the fruit into 2.5cm chunks. Place the chunks in a colander to drain.

Make the dressing in a small bowl by whisking together the olive oil, fresh lime juice, salt and black pepper.

Place the watermelon in a large salad bowl.

Pour the dressing and chopped mint over the watermelon and toss gently to coat.

Pour the crumbled feta
