During the holiday season, there’s more time for trying new recipes, whether it’s for a festive occasion, a casual meal with friends or a summery outdoor lunch.

MINTED ROAST LAMB WITH VEGETABLES

2.5kg easy-carve leg of lamb
2 tbsp dijon mustard
2 cloves garlic, crushed
2 tsp sea-salt flakes freshly ground black pepper
2 cups (500ml) water
800g baby carrots, scrubbed
40g butter, chopped
½ cup (180g) mint jelly
500g asparagus, trimmed
1 tbsp honey

Stand the lamb at room temperature for 30 minutes. Preheat the oven to 180°C.
