Seeing red

Beetroot is one of the most colourful veges around, and different varieties include roots of rich red, golden yellow and interesting white, with others having attractive candy-stripe rings of red and white when you slice them. Their colours are a giveaway that they’re a rich source of health-promoting antioxidants, as well as containing fibre and vitamins. Beetroot adds texture, fabulous flavour and vibrant colour when grated raw into salads and is sweet and delicious when roasted.
