All-in-one veggie lasagne

Ingredients
* 1 tbsp olive oil * 200g pack chilled Waitrose Cooks’ Ingredients Soffritto * 500g Italian passata with chopped basil * 6 lasagne sheets, halved lengthways * 350g frozen Quorn Mince * 125g mozzarella, drained and torn * basil leaves
Method
1 Preheat the grill to high. Heat the oil in a large ovenproof frying pan or shallow casserole dish over a medium-high heat. Fry the soffritto for 7 minutes, stirring regularly.
2 Tip in the passata, then fill the carton with water and add it to the pan. Simmer for 10 minutes, then stir in the pasta strips and mince, and simmer for another 5 minutes.
Scatter the mozzarella over the top and pop under the grill for 5 minutes. Grind over some black pepper and scatter over
