Made with just six ingredients!
Walnut, banana & carrot pancakes
SERVES 4-6
100g (3½oz) plain flour
1 tsp baking powder
1 large free-range egg
200ml (7floz) milk
1 small carrot, peeled, grated
1 ripe banana, peeled, mashed
75g (2¾oz) California Walnuts, chopped
2 tbsp oil
To serve
sliced strawberries
bananas, peeled, sliced
4 tbsp maple syrup
1 Put the flour and baking powder in a large bowl and make a well in the centre. Add the egg and whisk gently to combine, gradually adding the milk to form a batter. Mix in the carrot, banana and half the walnuts.
Heat a little oil in a large non-stick frying pan and add quarter of the batter, swirling around to give a pancake approx. 18cm (7in) in diameter.
