Gin-free ‘G&T’ recipe

SERVES 4-6

3 cardamom pods (optional)
¼ cucumber, ribboned
1 small bunch fresh mint, torn
1 strip orange zest
½ orange, juiced
½ lemon, juiced
50g pomegranate
1 litre soda water
2 large handfuls ice

METHOD

1. Add 100ml boiling water to a large jug.

2. Add the cardamom (if using, plus cucumber, half of the fresh mint, orange zest, orange juice and lemon juice. Allow it to infuse until the water has cooled (roughly 5-8 mins).

3. Add the ice to the jug, then pour over the soda water slowly (so the bubbles don’t disappear).
