Diabetes-friendly DINNERS

Cumin-spiced steak with white bean hummus

PREP + COOK TIME 35 MINS SERVES 4

1½ tbsp sunflower seeds
2 tsp pepitas (pumpkin seed kernels)
1 tbsp cumin seeds
500g beef fillet steaks
Extra virgin olive oil cooking spray
2 bunches broccolini

WHITE BEAN HUMMUS

400g can cannellini beans, drained, rinsed
1 garlic clove, crushed
2 tsp ground cumin
1 tablespoon tahini
½ cup fresh flat-leaf parsley leaves
2 tbsp lemon juice
2 tbsp water

1 To make white bean hummus, process all ingredients. Season.

Dry-fry sunflower seeds, pepitas and cumin seeds in a small heavy-based frying pan over medium heat for 2 minutes or until aromatic. Using a mortar and pestle or spice grinder, coarsely grind seed mixture. Reserve 1 tablespoon
