Smoky Butterflied Leg of Lamb

Serves 4, Prep and Cook: 40 mins

1.5kg butterflied leg of lamb, trimmed
2 tblsps olive oil
1 tblsp red wine vinegar
1 tsp Dijon mustard
1 bunch rocket, trimmed, washed
250g packet fresh whole beetroot, drained, quartered
¹/ ³ cup hazelnuts, toasted, chopped
½ cup drained, marinated feta
