Whip up the meringues and curd, chop some fruit and consider dessert done! serves 8

mini pavlovas

makes 16 | prep 15 mins (+ cooling) cooking 1 hour 30 mins E

3 egg whites (reserve yolks for the passionfruit curd)
165g (3/4 cup) caster sugar
1 tsp cornflour
1 tsp vanilla bean paste

Preheat oven to 120°C/100°C fan forced. Line 2 Large baking trays with baking paper. Use electric beaters to beat egg whites in a bowl
