    Rocky road just got even better as a pie filled with chunky chocolate custard and silky meringue!

    serves 12 | prep 40 mins (+1 hour 30 mins chilling & cooling) | cooking 30 mins

    3 egg whites
    155g (¾ cup) caster sugar
    40g dark chocolate, melted
    1 tbs shredded coconut
    Maraschino cherries, to serve

    225g (1½ cups) plain flour
    2 tbs Dutch processed cocoa powder
    2 tbs caster sugar
    150g butter, chilled, chopped
    2½ tbs iced water

    chocolate custard

    100g (2/3 cup) custard powder
    2 tsp Dutch processed cocoa powder
    500ml (2 cups) milk
    150g dark chocolate, chopped
    50g (¼ cup) red glace cherries
    40g (2/3 cup) mini marshmallows, plus extra, to decorate
