NUTTY, CREAMY, AND SUGARY SWEET, pralines are a confection Southerners know and love. These decadent candies are popular all throughout the South, and they’re an absolute must-have in New Orleans.
Although they’re staples in the Crescent City, pralines are said to have been created in France by Clement Lassagne, the personal chef of a French diplomat from the early 17th century named César, duc de Choiseul, Comte du Plessis-Praslin. Some say the chef got the idea from the children who would sneak scraps of nuts and caramel from his kitchen for a snack and caramelize them over the flame of a candle.
