Why Roasts of Different Lengths Cook at the Same Rate
In addition to our full-size Beef Wellington recipe (page 8) that serves eight to 10 people, we created a scaled-down version (available online) that serves just four. While developing the recipe for the smaller Wellie, which calls for a 1½ -pound roast, we were surprised to find that it cooks in exactly the same amount of time as the larger, 3-pound roast.
It turns out that the length of time it takes to cook a roast isn’t just dependent on its weight. Shape also matters. Imagine a line that runs through the center of the full-size roast.
