Starter: Samosas
Serves 6
These are fantastic snacks, and freeze well before baking.
You will need
✽ 400g potatoes
✽ 250g cauliflower
✽ 125g frozen peas
✽ 2tbsp sunflower oil
✽ 1 onion, finely chopped
✽ 1tsp cumin seeds
✽ 2 cloves of garlic, peeled and chopped
✽ 5cm fresh ginger, peeled and chopped
✽ ½-1 green bird’s eye chilli to taste, finely chopped
✽ ½tsp fennel seeds
✽ 1tsp garam masala
✽ 1tsp ground coriander
✽ ½ lemon, juiced
✽ Handful of fresh coriander, finely chopped
✽ 1 pack of ready-made filo pastry
✽ 3-4tbsp coconut oil, melted
✽ 2tbsp nigella seeds
