CHERRY COCONUT HEDGEHOG SLICE
MAKES 24 SQUARES PREP AND COOK: 20 MINS
125g unsalted butter, chopped
½ cup caster sugar
1 tsp vanilla extract
2 tblsps cocoa powder
1 egg, lightly beaten
250g packet Marie biscuits, roughly chopped
100g packet red glacé cherries, chopped
⅔ cup desiccated coconut
Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending the paper 2cm above pan edges.
