1.2kg meaty beef bones or oxtail1½ tbs sea salt8 whole cloves4 whole star anise2 tsp1 tsp fennel seeds2 tsp cumin seeds2 tsp peppercorns2 brown onions, quartered2 large carrots, cut into 5cm pieces5 garlic cloves, peeled, bruised8cm piece fresh ginger, peeled, cut into 2cm pieces2 cinnamon sticks2 tbs fish sauce, plus extra to taste15g palm sugar, grated2 tbs lime juice250g pkt flat rice noodles200-250g fillet steak, very thinly sliced200g bean sprouts, trimmed3 green shallots, thinly sliced1-2 long fresh red chillies, thinly sliced1½ cups mixed fresh herbs (coriander, Vietnamese mint, Thai basil)Hoisin sauce and lime wedges, to serve
