Espresso profiteroles

Serves 8

150g plain flour 
2 tsp caster sugar 
100g butter, cut into small pieces 
300ml water 
3 x Fairburn’s free-range mixed weight eggs, lightly beaten 
750ml double cream 
1 tbsp espresso coffee, mixed with 1 tbsp hot water 
1 tbsp Kahlua, optional 
200g dark chocolate, broken into pieces ☐
