BLACK BEAN AND ROAST PEPPER TACOS
Even meat lovers are unlikely to balk at a black bean ragù in lieu of beef. The spices, and sweet, sharp tomato sauce are one and the same, so they are every bit as tasty as each other. There contains a good blend of plant proteins in the beans, avocado and corn.
Serves 4 Per serving: With/without salsas protein 10/7.3g, fibre 13/9.1g, carbs 47/42g, fat 38/21g, energy 606/415kcal
■ Red peppers 600g, cores and seeds discarded, cut into 1-2cm strips
■ Extra virgin olive oil 5tbsp
■ Sea salt and black pepper
■ Vegan balsamic vinegar 2tsp
■ Large tomatoes 800g, halved through the core
■ Red onions 2, peeled and chopped
■ Garlic cloves 2, peeled and finely chopped
■ Ground cumin 1tsp
■ Paprika 1tsp
■ Cayenne pepper ¼tsp
■ Fresh marjoram leaves 1tbsp (optional)
■ Black beans half a 400g can (120g drained weight), rinsed*
■ Corn taco shells 8
