While clearing away my grandmother’s and mother’s old recipe booklets, compiled by ladies of the church or those who belonged to agricultural unions in the 50’s and 60’s, I was overcome with a great feeling of sadness, loss and hunger.

On those typed and copied pages with many footnotes and decorated in food splotches are recipes for side dishes. Yes, in those days vegetables and salads were sides and not mains – even chicken was sort of second place or a ‘vegetable’ when weighed up to a good, meaty roast!
