A TASTE OF SUNSHINE

Chicken musakhan

Musakhan is the hugely popular national dish of Palestine. It’s a dish to eat with your hands, served from one pot or plate, so everyone can tear at the bread and spoon over the chicken and toppings for themselves.

SERVES 4 PREP 20 mins COOK 50 mins EASY

1 whole chicken (about 1.7kg), quartered, or 1kg (about 4-6) chicken skinleft supremes, on (see tip, below right) 120ml olive oil, plus a drizzle
1 tbsp ground cumin
3 tbsp sumac
1/2 tsp ground cinnamon
1/2 tsp ground allspice
30g pine nuts
3 large red onions, thinly sliced
4 naan breads
very small handful of parsley leaves, roughly chopped

To serve

300g Greek yogurt
1 lemon, cut into wedges

Heat the oven to 220C/200C fan/ gas 8. Put the chicken in a large bowl with 2 tbsp of the oil, 1 tsp cumin, 1/2 tsp sumac, all the cinnamon, allspice, 1 tsp salt
