To make brânza de vaci, or curd cheese, bring to justand stir once or twice. Leave to cool. Pour the cold mixture through a muslin cloth into a bowl. Lift the cloth around the curds, tie the top with string and suspend over a bowl to drain overnight. To use the cheese in the pie (left), weigh it the next day and stir in some until you have 500g.
