Don’t be fooled – these adorable cakes might look like sandwiches, but they are, in fact, a classic Victoria sponge cake with fresh cream and jam
You will need
✽ 225g butter, cubed, plus extra for greasing
✽ 225g caster sugar
✽ 4 eggs
✽ 225g self-raising flour
✽ ¼tsp vanilla bean paste
✽ 200ml double cream, lightly whipped
✽ 150g jam, we used raspberry
