Mixed mushroom soup

Serves 4

Brown cap, white button, shiitake, mixed wild mushrooms or even dried mushrooms are good to use in this dish.

You will need

200g dried soba noodles
450g mixed mushrooms
180g pak choi
10g reduced-salt vegetable stock cube, dissolved in 600ml boiling water
1–2tsp finely chopped or grated fresh ginger
1tsp light soy sauce or 1tsp miso paste
¼tsp Chinese five-spice powder
2 star anise (optional)
1tsp rapeseed oil
1 onion, finely chopped
80g sugar snap peas

To serve: (optional)
