HAPPY puddings

BETTER BISCUITS

These ‘better biscuits’ (aka double chocolate chip cookies) can’t exactly be described as healthy, but they are healthier than a lot of the cookies out there – with oats and ground almonds for fibre. And cocoa is rich in antioxidant polyphenols.

MAKES 12-14

100g plain flour
2 tablespoons ground almonds
2 tablespoons porridge oats
50g cocoa powder
1 teaspoon baking powder
¼ teaspoon bicarbonate of soda
80g caster sugar
75g butter, melted and cooled
2 eggs, beaten
2 teaspoons vanilla✣ ✣ ✣ ✣
