Crowned spinach & feta quiche
Serves 6
Enjoy the quiche on its own or with a crunchy salad for the ultimate light summer supper. Theo uses a cake pan with high sides to get the 'crown' pastry effect.
You will need
✽ 125g mixed baby tomatoes
✽ 180g ready-rolled shortcrust pastry
✽ Plain flour, for dusting
✽ 4 eggs, plus 1 egg for egg wash
✽ 90g smoked bacon lardons
✽ 100g fresh baby spinach leaves
✽ 125ml double cream
✽ 125ml whole milk
✽ 70g grated mature Cheddar
✽ A generous pinch of freshly grated nutmeg
✽ 100g feta
