1 onion, diced Half a red pepper, diced Coconut oil for frying1 medium cauliflower head,½ cup cashew nuts15ml (1 Tbsp) curry powder5ml (1 tsp) turmeric15ml (1 Tbsp) sugar5ml (1 Tbsp) apricot jam15ml (1 Tbsp) chutney30ml (2 Tbsps) apple cider vinegar15ml (1 Tbsp) corn flour1 can coconut milkSalt and pepper to tasteFresh coriander for garnish
