QUICK & EASY rice and noodles

HOISIN PORK AND CASHEW NOODLES

SERVES 4 PREP AND COOK: 15 MINS

2 x 200g packet shelf-fresh udon noodles
500g pork stir-fry strips
1 tblsp vegetable oil
¼ cup hoisin sauce
2 tblsps oyster sauce
200g bag classic coleslaw
4 green spring onions, sliced
½ cup roasted cashew nuts (80g)

1 Place noodles in a large heatproof bowl. Cover with hot water. Stand for 2 minutes. Gently separate. Drain.

2 Meanwhile, toss pork with oil in a bowl.

3 Heat an oiled, large wok over a medium to high heat. Add pork in two batches. Stir-fry for about 1½ minutes, or until browned. Remove pork from pan.
