CHICKPEA, BROCCOLI AND BACON SALAD

An easy one to make ahead – it’s great for packed lunches and lazy summer picnics.

PER SERVING

341 cals; 18g fat; 4g sat fat; 21g carbs

SERVES 4

60g (2oz) lean bacon rashers
250g (9oz) Tenderstem broccoli
3tbsp olive oil
2tbsp sherry vinegar
1 x 400g can chickpeas, drained
1 x 285g jar roasted red peppers, drained and sliced
Large handful rocket leaves

1 Grill the bacon for a few mins, turning occasionally until crispy, then soak up any excess fat using kitchen paper.
