comes from the French word clafir, meaning to fill, and that makes perfect sense. Why? Because this rustic, country-French dessert is essentially made by layering fresh fruit in a pie plate (or a tart pan or even a baking dish or cast-iron skillet), with a thick, pancake-like batter before bubbling and baking away until it’s puffed and golden-brown. Cherries are traditional (actually unpitted ones, as they’re said to add an almond-like component).
