NOODLE CUPS WITH ORIENTAL SPICED MINCE
Instant noodles are just the ticket for a quick meal. We make it nutritious by adding veggies and beef mince.
SERVES 4 PREPARATION: 10 MIN COOKING: 20 MIN
MINCE
15ml (1T) oil
1 onion, chopped
5cm ginger, chopped
2 garlic cloves, chopped
2 chillies, chopped
250g beef mince
30ml (2T) soy sauce
45ml (3T) honey or brown sugar
NOODLES
250g instant noodles
300g coleslaw mixture
½ cucumber, diced
handful of fresh coriander, chopped
TO SERVE
50g peanuts
extra chopped chillies (optional)
sesame seeds
Heat the oil in a pan and fry the onion, ginger, garlic and chillies until fragrant. Add the mince and stir-fry
