Ocean bounty

1 SPICED WHOLE FISH

SERVES 4-6 PREPARATION: 15 MIN COOKING: 15-20 MIN

FISH

1 large whole fish (such as silverfish), cleaned and scaled
salt and freshly ground pepper

SPICE MIXTURE

4 garlic cloves, chopped
juice of 1 lemon
15ml (1T) ground cumin
15ml (1T) paprika
5ml (1t) cayenne pepper
30ml (2T) olive oil

TO FINISH

1 lemon, sliced
a handful of fresh coriander
1 chilli, chopped (optional)

Preheat the oven to 200°C. Put a wire rack on a baking sheet and grease with nonstick spray.

1 Fish Season the fish inside and out with the salt and freshly ground pepper.

2 Spice mixture Mix all the ingredients well and rub the fish inside and out with the mixture.

3 To finish Arrange the fish on the wire rack and stuff with the lemon and fresh coriander.

3 Roast in the oven for 15-20 minutes or until cooked. If preferred, you can also braai the fish.

4 Sprinkle the chilli over (if using) and serve.

TIP

 A whole fish is cooked when the tail can easily be broken and the eyes
