INGREDIENTS  7g sachet easy-bake yeast  300g strong white bread flour  100g light spelt flour  20g salted butter, softened  ¼tsp salt  ½tsp sugar  ½tsp caraway seeds FOR THE BEETROOT PASTE  150g ready-to-eat beetroot  65g creme fraiche  1tbsp horseradish sauce FOR THE GLAZE  1 egg yolk TO SERVE  Pickled herring  A few sprigs of dill

Mix the yeast in 275ml of tepid water. Add the flours, butter, salt, sugar and caraway seeds into a bowl. Using a mixer with a dough hook, add the water and mix for 10-15 mins. Pop the dough into an oiled bowl covered with a tea towel, and leave
