450g ricotta 1 large egg, plus 1 egg yolk 45g Grana Padano cheese, finely grated, plus extra to serve 60g plain flour 4tbsp olive oil 2 garlic cloves, crushed 400g tin chopped tomatoes A few fresh basil leaves

1 Mix together the ricotta, egg, extra egg yolk and the Grana Padano. Season well with salt and pepper. Stir in the flour, then use your hands to bring the mixture together to form a soft dough. Flour a baking tray. Use two spoons to shape 30 rough oblong shapes – a little larger than gnocchi – from the dough and spread out evenly on the tray.

2 Dust the gnudi with flour and set aside while you prepare the sauce.
