Meal Prep MAKEOVER

FISH TACOS

MAKES: 6 PREP TIME: 10 MINS, PLUS 20 MINS MARINATING COOK TIME: 6 MINS

600g ocean or rainbow trout fillets, skin on
2 tsp red curry paste
2 tbs coconut cream
1 tsp fish sauce
1 tsp pure maple syrup
Juice of ½ lime
Extra virgin olive oil, for drizzling
6 x 40g wholemeal tortillas, warmed
Tomato Salsa Salad (see recipe below)
80g lettuce leaves, shredded
130g Greek-style yoghurt
Lime or lemon wedges, to serve

1. Put the trout in a large bowl. Combine the curry paste, coconut cream, fish sauce, maple syrup and lime juice in a bowl. Pour the curry mixture over the trout and marinate for at least 20 mins.

Heat a barbecue hotplate or a frypan to medium heat. Drizzle a little of the oil over the plate
