Meal Prep MAKEOVER
FISH TACOS
MAKES: 6 PREP TIME: 10 MINS, PLUS 20 MINS MARINATING COOK TIME: 6 MINS
◆ 600g ocean or rainbow trout fillets, skin on
◆ 2 tsp red curry paste
◆ 2 tbs coconut cream
◆ 1 tsp fish sauce
◆ 1 tsp pure maple syrup
◆ Juice of ½ lime
◆ Extra virgin olive oil, for drizzling
◆ 6 x 40g wholemeal tortillas, warmed
◆ Tomato Salsa Salad (see recipe below)
◆ 80g lettuce leaves, shredded
◆ 130g Greek-style yoghurt
◆ Lime or lemon wedges, to serve
1. Put the trout in a large bowl. Combine the curry paste, coconut cream, fish sauce, maple syrup and lime juice in a bowl. Pour the curry mixture over the trout and marinate for at least 20 mins.
Heat a barbecue hotplate or a frypan to medium heat. Drizzle a little of the oil over the plate
