Many Kiwis lucky enough to get out and fish for their own seafood will have experimented with smoking some of their catch. It’s a popular backyard hobby, and plenty of people who live on the coast have little smokehouses, or smokers made out of old iron drums or kerosene cans, but there are also inexpensive metal smokers available at hardware stores.
