Sweet potato galette
This crusty vegetable tart is perfect for brunch, lunch or dinner!
SERVES 4 Mix 2 tbsp olive oil and 1 peeled, crushed garlic clove in a bowl. Add 200g sweet potato cut into 1.5mm-thick slices and mix to coat. Place 2 tbsp butter in a frying pan, add 1 sliced red onion and saute about 10 mins until soft and caramelised. Remove from heat and set aside to cool. Trim the edges of 1 defrosted
